Ingredients

  • 1/4 cup packed light brown sugar
  • 1 1/2 tablespoons salt
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 3 3/4 pounds flanked-style beef short ribs (sliced 1/3 inch thick)
  • 1 teaspoon garlic salt
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper
  • Canola oil, for oiling the grate

Directions

  1. In a medium bowl, mix all the ingredients except the short ribs and oil.
  2. Rub the mixture onto the short ribs and then let it marinate for 20 minutes.
  3. Preheat your grill and grease the grate with canola oil or nonstick spray.
  4. Grill the short ribs over high heat for 6 minutes on each side. Turn once until each side is nicely charred and nearly cooked through.
  5. Transfer to a plate and serve warm.

  • 1/2 cup plain yogurt
  • 2 cloves garlic, grated

  • 2 teaspoons lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon garam masala
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon salt and pepper
  • Canola oil, for oiling the grate
  • 1 medium-size red onion, cut into 1-inch wedges, then halved crosswise
  • 4 pieces flatbread or naan

Ingredients for Cucumber and Cilantro Yogurt Sauce (Tzatziki)

  • 3/4 cup plain yogurt
  • 1/2 seeded, coarsely grated, and also peeled English cucumber
  • 1 scallion, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 3/4 teaspoon ground coriander
  • 3/4 teaspoon cumin
  • 1/2 teaspoon salt and pepper

Directions for Chicken Kebabs

  1. In a medium bowl, mix all the ingredients except the chicken.
  2. Combine the chicken and then let it marinate for 15 minutes.
  3. Preheat your grill and grease the grate with canola oil or nonstick spray.
  4. Assemble the kebabs with chicken and onions onto six large skewers.
  5. Grill the kebabs for 8 to 10 minutes over high-medium heat, occasionally turning, until the chicken is cooked through and onion is tender.
  6. Toast the flatbread or naan about 1 minute each side
  7. Serve the kebabs and flatbread with Tzatziki Sauce.

  • 1 small Italian eggplant
  • 6 medium portobello mushrooms
  • 1 yellow squash
  • 1 zucchini
  • 1/4 teaspoon sea salt
  • 6 mini brioche buns or dinner rolls
  • 3/4 teaspoon sesame oil
  • 1/4 teaspoon sesame seeds
  • 4.50 oz. Swiss cheese

Directions

  1. Preheat your grill and grease the grate with canola oil or nonstick spray.
  2. Prep the ingredients by washing and drying the veggies. Trim the stems from the mushrooms. Slice the eggplant, squash, and zucchini into 1/4-inch-thick rounds.
  3. Brush the vegetables with canola oil and then season with salt.
  4. Grill vegetables for 10 minutes on each side or until softened and grill marks have formed. You may brush with more oil to prevent it from sticking.
  5. Split and toast your brioche buns or dinner rolls for 30 seconds on each side.
  6. Transfer grilled vegetables and buns to a plate. Then, brush the buns with sesame oil and sprinkle with sesame seeds.
  7. Finally, assemble the burger with the grilled eggplant, squash, zucchini, mushroom, and swiss cheese.

  • Heavy Duty foil
  • 16 ounces smoked turkey or chicken sausage, coined
  • 2 cups (~3/4 pound) baby red potatoes, quartered
  • 2 cups (~3/4 pound) green beans, trimmed
  • 3 corn on the cobs, sliced
  • 4-6 tablespoons unsalted butter
  • 1 teaspoon paprika
  • 1 1/2 teaspoon dried parsley
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon garlic powder
  • 4 cloves minced garlic
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt and pepper

Directions

  1. Preheat the grill.
  2. Prep the ingredients by washing and drying the veggies. Coin the sausages and corns. Trim the end of the green beans. Slice the red potatoes into equally quartered size.
  3. Add the prepped sausages and veggies into a large bowl. Toss with all the seasonings except the butter until well combined.
  4. Divide the mixture evenly into 4-6 sheets of heavy-duty foil. Place a tablespoon of butter in each foil packet and wrap them, so the foil is completely sealed.
  5. Grill the foil packets on medium-high heat for 25-30 minutes. Flip the packet at the halfway point.
  6. Transfer to plate and then carefully open the packets expecting steam to be released. Serve and enjoy!
